BBQ chicken salad made with my leftover BBQ chicken breast and corn on the cob, tomatoes and avocado from Saturday night and my leftover dinner salad from last night's takeout that I didn't get around to eating with my dinner as I plowed through a seafood burrito that had to weigh about 2 lbs. Then I took the kids out for ice cream when they woke up from their nap. I too, am weak.
Monday is the one day that my 4 year old doesn't have preschool (and his older brother and sister are in school), so it's our hang-out day and he talked me into McDonald's. Am I capable of going to McDonald's and just having a salad? No. Not really. So... I had a Big Mac, small fries, and a diet coke. Yeah, one of those days. Wonder why I've put on 16 pounds in the past year and a half???
That guac looks so good. I think that I'm going home right now to make some. That looked like a well balanced meal to me! I had PB &J sandwich and cucumbers. I would have rather had that fantastic looking chocolate cake. :) P.S. love your blog.
